Preparation time: 20 minutes | Cooking Time: 25 minutes | Total Time: 45 minutes | Serves: 8

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 lbs fresh strawberries, sliced
  • 1/4 cup sugar
  • 2 cups heavy cream
  • 1/4 cup powdered sugar

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch round cake pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  3. Add the milk and vanilla extract to the mixture and stir until just combined.
  4. Transfer the dough to the prepared cake pan and press it down evenly. Bake for 20-25 minutes or until the top is golden brown. Let it cool completely.
  5. In a separate bowl, mix the sliced strawberries with sugar and let them sit for 10 minutes to release their juices.
  6. In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  7. To assemble the shortcake, cut the cake in half horizontally. Place the bottom half on a serving plate and top with half of the whipped cream and strawberries. Place the other cake half on top and repeat the layers.
  8. Serve immediately and enjoy!
