Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder see notes above
  • 1 teaspoon baking soda
  • 1/2 to 1 teaspoon sea salt
  • 16 tablespoons softened butter
  • 1.5 cups dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • granulated sugar for rolling 1/4 to 1/2 cup

Instructions
 

  • Preheat your oven to 350ºF and line a baking sheet with parchment paper.
  • Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl; set aside.
  • Beat butter and brown sugar in a stand mixer with the paddle attachment on medium speed for 2–3 minutes until light and fluffy.
  • Add the egg and vanilla to the mixer, beating until fully combined.
  • Gradually mix in the dry ingredients on low speed until fully incorporated.
  • Roll 2-tablespoon portions of dough into balls, coat generously in granulated sugar, and place 6 balls on the prepared baking sheet.
  • Bake for 12 minutes, let cool on the sheet pan, and repeat with remaining dough. Store in an airtight container for up to a week or freeze for up to 3 months.
