- 2 cups all-purpose flour
- 1/2 cup cocoa powder see notes above
- 1 teaspoon baking soda
- 1/2 to 1 teaspoon sea salt
- 16 tablespoons softened butter
- 1.5 cups dark brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- granulated sugar for rolling 1/4 to 1/2 cup
Preheat your oven to 350ºF and line a baking sheet with parchment paper.
Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl; set aside.
Beat butter and brown sugar in a stand mixer with the paddle attachment on medium speed for 2–3 minutes until light and fluffy.
Add the egg and vanilla to the mixer, beating until fully combined.
Gradually mix in the dry ingredients on low speed until fully incorporated.
Roll 2-tablespoon portions of dough into balls, coat generously in granulated sugar, and place 6 balls on the prepared baking sheet.
Bake for 12 minutes, let cool on the sheet pan, and repeat with remaining dough. Store in an airtight container for up to a week or freeze for up to 3 months.
