Ingredients:
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder

- 5 large eggs, separated
- 1 cup granulated sugar
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- 1 cup heavy cream
- 1 teaspoon ground cinnamon, for garnish
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
- In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the egg yolks with 3/4 cup of sugar until light and fluffy. Stir in the milk and vanilla extract.
- Gently fold in the flour mixture until well combined. In a separate clean bowl, beat the egg whites until peaks form. Gradually add in the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
- Gradually fold the egg whites into the batter until just combined. Pour the batter into the prepared baking dish and smooth the top.
- Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, combine the evaporated milk, sweetened condensed milk, and heavy cream in a saucepan over low heat. Stir until well combined and warmed through.
- When the cake is done, poke holes all over the top with a fork. Pour the milk mixture over the cake, making sure to cover the entire surface. Let the cake cool to room temperature, then refrigerate for at least 2 hours or overnight.
