Introduction:

Ingredients:

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon ground cinnamon, for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the egg yolks with 3/4 cup of sugar until light and fluffy. Stir in the milk and vanilla extract.
  4. Gently fold in the flour mixture until well combined. In a separate clean bowl, beat the egg whites until peaks form. Gradually add in the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
  5. Gradually fold the egg whites into the batter until just combined. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake in the preheated oven for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, combine the evaporated milk, sweetened condensed milk, and heavy cream in a saucepan over low heat. Stir until well combined and warmed through.
  8. When the cake is done, poke holes all over the top with a fork. Pour the milk mixture over the cake, making sure to cover the entire surface. Let the cake cool to room temperature, then refrigerate for at least 2 hours or overnight.
