Ingredients:
- 1 cup cake flour
- 1 1/2 cups sugar
- 12 large egg whites
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
Instructions:
- Preheat the oven to 325°F and line a cupcake pan with liners.
- In a medium bowl, sift together the cake flour and 3/4 cup of sugar. Set aside.
- In a separate bowl, beat the egg whites until frothy. Add the cream of tartar and continue to beat until soft peaks form.
- Gradually add the remaining sugar, vanilla extract, almond extract, and salt while continuing to beat until stiff peaks form.
- Gently fold in the flour mixture until well combined.
- Spoon the batter into the cupcake liners, filling each about 3/4 full.
- Bake for 18-20 minutes or until the cupcakes are golden brown and a toothpick inserted into the center comes out clean.
