  • 1 cup cake flour
  • 1 1/2 cups sugar
  • 12 large egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt


  1. Preheat the oven to 325°F and line a cupcake pan with liners.
  2. In a medium bowl, sift together the cake flour and 3/4 cup of sugar. Set aside.
  3. In a separate bowl, beat the egg whites until frothy. Add the cream of tartar and continue to beat until soft peaks form.
  4. Gradually add the remaining sugar, vanilla extract, almond extract, and salt while continuing to beat until stiff peaks form.
