Carrot Cake Recipe

  • 2 cups all-purpose flour
  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 1 tsp vanilla extract


  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix together the sugar, oil, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Stir in the grated carrots, walnuts, raisins, and vanilla extract.
  6. Pour the batter into the prepared baking pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely before frosting.
  8. For the cream cheese frosting, beat together 8 oz softened cream cheese, 1/2 cup softened butter, 2 cups powdered sugar, and 1 tsp vanilla extract until smooth and creamy.
  9. Spread the frosting over the cooled cake and enjoy!
