Preparation time: 15 minutes | Cooking Time: 15 minutes | Total Time: 30 minutes | Serves: 6

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 cups sliced strawberries
  • 1/4 cup sugar
  • 1 cup whipped cream

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until it resembles coarse crumbs.
  4. In a separate bowl, mix the heavy cream and vanilla extract. Gradually add the cream mixture to the flour mixture, stirring until a dough forms.
  5. Turn the dough out onto a lightly floured surface and knead it gently a few times. Pat the dough into a 1-inch thick circle and cut out rounds using a biscuit cutter.
  6. Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While the shortcakes are baking, toss the sliced strawberries with sugar and let them sit at room temperature to macerate.
  8. Once the shortcakes have cooled slightly, split them in half and top with the macerated strawberries and whipped cream.
  9. Serve the homemade shortcakes immediately and enjoy!
