HUMMING BIRD CAKE RECIPE

Ingredients:

  • 3 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda

  • 3 large eggs, beaten
  • 1 cup vegetable oil
  • 1 1/2 teaspoons vanilla extract
  • 1 can (8 oz) crushed pineapple, undrained
  • 2 cups mashed ripe bananas (about 3 bananas)
  • 1 cup chopped pecans
  • Cream Cheese Frosting:
    • 1/2 cup unsalted butter, softened
    • 1 package (8 oz) cream cheese, softened
    • 1 teaspoon vanilla extract
    • 4 cups powdered sugar

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, cinnamon, and salt.
  3. Add eggs, oil, vanilla, pineapple, bananas, and pecans; stir until blended.
  4. Pour batter into prepared cake pans and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cakes to cool in pans for 10 minutes, then remove from pans and cool completely on wire racks.
