  • 1/2 cup butter, melted

  • 1/4 cup sugar

  1. Crush one package of Oreo cookies in a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
  2. Combine the crushed Oreo cookies with melted butter and press into the bottom of a greased 9-inch springform pan to form the crust. Chill in the refrigerator for 30 minutes.
  3. In a mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Spread half of the cream cheese mixture over the Oreo crust. Top with a layer of Oreo cookies. Repeat with the remaining cream cheese mixture and Oreo cookies.
  5. In a small saucepan, heat the chocolate chips and remaining heavy cream over low heat, stirring until smooth. Pour the chocolate ganache over the top of the cake, spreading evenly.
  6. Chill the Oreo Cookie Cake in the refrigerator for at least 4 hours, or until set. Serve chilled and enjoy!
