  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 12 egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt


  1. Preheat oven to 325°F (165°C).
  2. In a medium bowl, sift together cake flour and 3/4 cup of sugar. Set aside.
  3. In a large mixing bowl, beat egg whites until foamy. Add cream of tartar and continue beating until soft peaks form.
  4. Gradually add remaining sugar, 1/4 cup at a time, and continue beating until stiff peaks form.
