  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs, separated
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 cup flaked coconut
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 16 oz powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans, toasted


  1. Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add egg yolks one at a time, beating well after each addition.
  3. In a separate bowl, combine the flour and baking soda. Add the dry ingredients to the creamed mixture alternately with the buttermilk, beginning and ending with the flour mixture. Stir in vanilla, pecans, and coconut.
  4. In a clean bowl, beat egg whites until stiff peaks form. Gently fold egg whites into the batter. Divide batter evenly among the prepared pans.
  5. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
  6. For the frosting, beat together the butter and cream cheese until smooth. Gradually add powdered sugar and vanilla, beating until smooth and creamy.
  7. Place one cake layer on a serving plate and spread with frosting. Repeat with remaining layers. Frost top and sides of cake with remaining frosting. Sprinkle with toasted pecans.
