  • 2 cups all-purpose flour

  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups grated carrots

  • 1/2 cup crushed pineapple, drained
  • 1/2 cup shredded coconut


  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.

  3. In another bowl, beat together the oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
