BLUEBERRY PANCAKE

Introduction:

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg, beaten
  • 2 tbsp melted butter
  • 1 cup fresh blueberries
  • Butter or oil for the pan
  • Maple syrup for serving

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Gently fold in the blueberries.
  5. Heat a non-stick skillet or griddle over medium heat and grease with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes on the other side.
  8. Repeat with the remaining batter.
  9. Serve the pancakes warm with maple syrup.
